Tasting:
Topaz-yellow transparency with silvery reflections.
Mineral first nose, on flint and chalk, then opening to notes of white flowers (acacia, almond blossom) and citrus (kumquat, lemon peel), finishing with a touch of fresh almond and star anise.
Dense and long palate. The attack is ample and full, then evolves toward surprising salinity on the finish.
Terroir: Soils of sandstone with rolled pebbles.
Winemaking:
Harvested at two maturity stages: an early harvest for freshness, with several days of cold stabilization to increase aromatic potential; a second harvest at higher maturity for density. Classic vinification at controlled temperature.
Aged in amphora to preserve fruit and optimize the grape’s minerality.
Alcohol: 13.5%
Serving temperature: 10–12°C
